We have a group of users (employees) who want to be able to Post Wiki's/Articles/Blogs on their groups without that item being assigned to that specific member.
Do we create a Profile "Product Tech Team" which can be accessed by multiple people?
Does anyone have any suggestions on how to overcome this?

I think you have two options without customizing your community:
1. Creating one profile that can be accessed my multiple users like "Product Tech Team" is a good idea if all the members are internal or trusted.
2. For blogs specifically, you can post blog posts on behalf of another user, you can read the documentation for that here: How do I write a blog post for another member?
Otherwise there are bespoke solutions available, but that would require development efforts
