How do you get new site roles to appear under group roles?

Can you please post a screen recording here/ screen shots of what you are trying to do? 

I followed the process and was able to see the Role after choosing "Show All Roles" under Group Options -> Permissions. Is this what you were looking for?

First I saw the currently permissioned Roles

Then I created a Role "Sample Role with Users". Going back to group options it appears when I change the dropdown to "Show All Roles"

At the moment, I have to manually add group members into this role after they join the group.

For this item, you could use this Automation Rule provided by Verint in the Verint Community Marketplace - Now Open! 

 Add or Remove Members from Role Based on Membership Type  

Thank you all for your help on this. We wanted to specifically add a new member type for a private group but it looks like we can only add site roles at the moment.
