I want to change the text of some of the live alert notifications (the ones shown when clicking on the lightening button in the top banner), but I can't find where. I've looked in the Notifications section in the admin centre, but that just seems to be for email notifications. I am running version 12.0.0.15013.

I haven't tested this, and I'm on 12.1 (not 12.0), but I think you were really close, Steve_Bentley.
Try going to Admin > Notifications > Notifications > select a notification, and then go to the "Translation" tab:
For reference, in case you are looking at other changes, I believe the underlying functionality runs through the Site Banner widget (I checked there before the Notifications admin menu. It has the code to control it, but not the text strings).
I definitely recommend trying in a test environment first if at all possible!
