Suggestions on the best way to customise jQuery.fn.evolutionTagTextBox

Hi 
 I have a requirement to customise the tag entry within content creation across a site and restrict it to a set list so need to override the ootb tag editor 
 Does anyone have any advice on the best way to achieve this 
 Ideally I'd want to override the editor in a custom theme js file

If you want to enforce the restriction, you could do so with an automation handling the Tag.AfterAdd event and remove any tags that are invalid. 
 As for adjusting the UI, you can override jQuery.fn.evolutionTagTextBox using a theme-defined script. Theme scripts are rendered in the <head> after the platform scripts (which include the platform-defined implementation of evolutionTagTextBox).
