You're talking about putting data from Stripe events into community via REST? You would need something from Stripe to uniquely identify the user taking the action, and then it's just calling Show User REST endpoint using the unique id, and then the Update User REST endpoint with the rest of the data you want to store from Stripe.

You could also look into if an HTTP Request Triggered Automation might fit your need.
